https://bookviewcafe.com/new-worlds-immortality/ notes that in Tolkien it's always a female elf who gives up immortality for her husband, never the reverse (though sometimes there's no change or the mortal man becomes immortal, hello Tuor.) As I say in a comment, that actually seems a common pattern. The only kind-of exception I can think of is Superman II, where Supes gives up his powers to "be with" Lois; not sure if he was giving up immortality too, and anyway he takes his powers back later.

Do you know of other exceptions?

Do you feel like utterly nerding out in general about immortality and romance? Feel free to indulge any "In this essay I will" impulses here.
