Used my black beans to make my first veg chili. (My family's tomato meat sauce probably qualifies as a kind of Cincinatti chili, though we never called it that.) Olive oil, onions, garlic, chopped carrots and celery, canned tomatoes, beans, "Italian seasoning", "chili powder". Came out pretty good, though I'm not used to celery in things. (I'd heard of some soup trifecta, mirepoix, onions carrots celery, figured I'd try it.)

Eating some day old chili before some nuked potatoes was not good for the potatoes. Even with various seasonings they seemed very bland.

I recently had some chili that had chopped up tomatillos in it, which was a surprise. And they worked really well.

It also occurs to me that I've never made chili, and really should at some point. One of our staples is lentil spaghetti sauce, which is also a tomatoes-legumes-spices dish, but it would be nice to try some other variations.
